3 ways to navigate diet talk around the holidays

Struggle with all the diet talk around the holidays? You’re not alone! Follow these three suggestions for how to navigate food and body conversations during the holiday season.

image with dried oranges and holiday decor with text that says "3 ways to navigate diet talk around the holidays"

The holiday season can bring all the feels along with it.

It can be a time of joy, gratitude, connection, cheer, and it can bring along grief, anxiety, and frustration.

One minute you’re kicking back on the couch watching the game savoring your pumpkin pie and the next your aunt is going on and on about how she can’t eat dessert because it’s “loaded with sugar” and she’s “watching her weight.” So much for enjoying that pie!

The holidays can be a breeding ground for diet and weight talk. Everyone is so concerned about what they’re eating, how it doesn’t fit their diet, and how they are going to put on weight over the holidays. And everyone likes to vocalize it (likely so that they can judge themselves before others can).

It’s hard to eat in peace when people are talking about how bad they are for taking seconds of stuffing or how they have to start their diet tomorrow.

It can be hard not to internalize it too. Thoughts begin to surface like “well maybe I should start a diet tomorrow too,” “I guess I’m bad for getting a second serving of those mashed potatoes,” “maybe I should’ve skipped the pie too.”

Part of the work is building resilience so that you can say “good for you, not for me.” And part of the work is knowing your options for navigating diet talk and choosing the best option for you in that moment given your bandwidth and energy at the time.

Here are a few ways you can navigate diet and weight talk during the holidays:

    1. Remove or excuse yourself from the conversation.

If you feel like you don’t have the bandwidth or energy to set boundaries or speak up, simply remove yourself from the conversation. Get up and walk out of the room so that you don’t have to hear the conversation anymore.

A strategic bathroom break (even if you don’t need to use it) can be a helpful move. Close the door. Take three deep breaths. Notice what feelings are coming up for you – maybe frustration or grief – give them space to move through you.

Offer yourself some self-compassion for how hard it is to be in those situations when you’re actively trying to move away from dieting and micromanaging your weight.

Maybe you step outside and get some fresh air. Maybe you go check on the little ones in your family if they’re playing in another room. Maybe you go upstairs to a bedroom if it’s accessible and lie down for a few minutes.

Ground yourself and your nervous system. Remind yourself of your values. Notice how your values are or aren’t aligned with the conversation in the other room. Decide to take action from your set of values, not someone else’s.

Graphic with quote: "Remind yourself of your values. Notice how your values are or aren't aligned with the conversation in the other room. Decide to take action from your set of values, not someone else's."

    2. Change the subject.

If you don’t have the bandwidth to set a boundary but you do have the capacity to stay in the room and engage, try changing the subject. You can still engage in conversation, just not the conversation about how many calories were in the stuffing. Here are some examples of subject changing you can try on for size:

Did anyone catch the final score of the football game?

Has anyone watched the latest season of [insert whatever series you just finished binging]?

I just finished this amazing book called [insert title]. Has anyone read it?

What podcasts are you listening to right now?

    How is work going?

Did I tell you about my trip to [insert place]?

Your table looks gorgeous. Where did you get those candles?

You can change the subject to lit-er-all-y anything other than diet and weight talk. Go into holiday gatherings with a couple of these in your back pocket in case you want to use them.

Graphic with quote: "You can change the subject to lit-er-all-y anything other than diet and weight talk. Go into holiday gatherings with a couple of subject changers in your back pocket in case you want to use them."

    3. Set a boundary.

This one requires more energy and mental bandwidth because depending on the person you might be met with defensiveness or you may need to maintain the boundary over and over.

There’s an acronym that comes from dialectical behavioral therapy (DBT) that I like to reference when it comes to setting boundaries – DEAR MAN.

D: Describe the current situation, if necessary.

E: Express your feelings or opinions on the situation.

A: Assert yourself by asking for what you want or saying no clearly.

R: Reinforce the person ahead of time by explaining the positive effects of getting what you want or need.

(this second half is used more so after you’ve stated the boundary)

M: Mindful – keep focus on your objectives.

A: Appear confident – keep effective and confident. Use confident voice tone and physical manner. Make good eye contact.

N: Negotiate – be willing to give to get. Offer and ask for alternative solutions. Reduce your request. Focus on what will work.

Graphic with quote: "Use the acronym DEAR MAN to set boundaries" and listing acronym components

Using this acronym, here’s what a couple of boundaries might sound like:

Aunt Phoebe, you’re talking about how bad you are for eating dessert and it makes me feel like I can’t enjoy my slice of pie. I’d like you to stop talking about foods as good or bad around me so that I can be present while I eat and enjoy the company of our family.

Uncle Bob, you keep talking about how you need to lose X lbs and it makes me feel bad about my weight. I would be very grateful if you could refrain from talking about your weight and body size at the dinner table.

If you’re being met with deflection or resistance, using MAN, you might need to say things like:

I’d be happy to talk about (deflection) another time but right now I’d like to stay with the issue I brought up.

    What do you suggest then?

And if someone isn’t able to respect your boundary (which unfortunately happens sometimes – usually with the people that need the boundaries the most), then you can work on other skill sets like distress tolerance, radical acceptance, resilience, and emotional regulation.

Boundary setting isn’t easy but it can be very effective to use in relationships. I love the quote by Prentis Hemphil, “a boundary is the distance in which I can love you and me simultaneously.”

Remember that there is no right or wrong answer for how to navigate diet talk – you may use all three of these suggestions but at different times and with different people. Always check-in with yourself first before responding so that you can navigate in a way that honors your bandwidth and capacity.

No matter which option you choose, shower yourself with self-compassion. It’s hard to navigate your own relationship with food and body around the holidays even without the uptick in volume on diet talk. Treat yourself kindly. Remind yourself you are not alone in navigating this.

  • How To Improve The Appearance Of Acne Scars

How To Improve The Appearance Of Acne Scars

Every time a pimple pops up on your face, we know what you’re thinking: This is war. But it’s actually after you’ve conquered the enemy (with your arsenal of skin care products) that the battle truly begins. Eliminating these short-lived blemishes often leaves long-lasting acne scars which can be the most disheartening part of clearing away pimples. Read on to find out how to get rid of the look of acne scars and reduce the appearance of dark spots from acne.

    What Are Acne Scars?

First of all, what exactly are acne scars and why do they mark the skin? Dermatologist Dr. Lily Talakoub explains that acne scarring occurs when “the skin displays an inflammatory response to previous acne (whiteheads, cysts, nodules, etc.) and physical intervention such as picking or popping.” Acne scars can occur in different forms and it’s not unusual to suffer from multiple types of scars.

The Most Common Types Of Acne Scars

Acne scars typically fall into two primary categories, with a third type — the raised keloid scar — appearing less commonly. The first category includes dark acne spots, often left behind as pigmented reminders of past breakouts. The second type includes depressed acne scars, which are indentations on the skin. These come in different shapes: rolling scars with a wavy appearance, ice pick scars that are deep and narrow, and boxcar scars with wider, more pronounced edges. Let’s unpack this more.

    Dark Acne Spots

Dark acne spots, often called post-inflammatory hyperpigmentation (PIH), are flat spots of darker skin that stay after an acne lesion has healed. Dark acne spots tend to form when the skin’s natural healing process triggers the production of excess melanin (the pigment that gives skin its color) in response to inflammation. The discoloration can range in color from pink to red, brown or black, depending on your skin tone and the depth of the discoloration. The duration these spots remain visible can vary widely, from a few weeks to several months or even longer. PIH can develop in all skin types, but it tends to be more severe and longer-lasting for people with medium to dark complexions, according to Very Well Health.

Depressed Acne Scars Such As Rolling, Ice Pick & Boxcar Scars

Indented scars are caused when inflammation occurs in acne-damaged skin tissue. The lack of collagen causes the scar tissue to sink into the skin, resulting in textured scars. Ice pick scars are in the shape of a point and boxcar scars appear with a wider base. Rolling scars, on the other hand, are shallower and softer to the touch.

Fortunately, we have several products that help get rid of the look of acne scars. The Acne Advanced Treatment System, Arctic Berry Peel & Peptide Illuminating System and our Citrus & Kale Potent C+E Serum are all skin care lifesavers that can help the appearance of different types of acne scars, including dark spots and depressed acne scars. Keep reading to find out how to use them.

How To Improve The Look Of Dark Acne Scars

After a pimple heals, and a dark acne spot or “scar” is left behind, you can target these areas with specific treatments. Lead Skin Care Trainer, Natalie Pergar, tells us: “You want to look for ingredients that are going to brighten. This will help a lot with minimizing the appearance of darkness left behind by the acne condition itself.”

So, do acne scars go away? And how long will it take? Natalie says that, depending on the level of discoloration, it can take between three and six months to see visible improvements. But, using the right ingredients at the right time can make all the difference in accelerating this process. Ingredients to seek out include: zinc hyaluronate, arbutin, licorice root and antioxidants.

Here are a few skin care products she recommends adding to your routine to minimize the appearance of discoloration. The Acne Advanced Treatment System — especially the Acne Advanced Clarifying Hydrator — works powerfully at reducing the appearance of dark acne spots. Zinc hyaluronate is one of the key ingredients that reduces the look of irritation and scarring. Arbutin is the other potent element for targeting the appearance of acne-related dark spots. Working in tandem, these effective ingredients reduce the appearance of dark scarring caused by problem skin.

Aside from the Acne Advanced Treatment System, the Arctic Berry Peel & Peptide Illuminating System offers an additional way of reducing dark acne scars, using a blend of arctic berries, lingonberry seed oil and hibiscus seed extract. The system’s powerful blend of antioxidant-rich ingredients diminishes the look of these troubling marks and brightens the skin. In addition, mandelic and citric acid ingredients gently exfoliate and minimize the look of darker areas.

Another heavy-hitter skin care product, our Citrus & Kale Potent C+E Serum, also helps to balance and even out the look of skin tone. To lessen the look of dark spots, this powerful serum is formulated with Vitamin C from lemons and grapefruit and Vitamin E from avocados and kale.

The Bright Skin Licorice Root Booster-Serum is another effective skin care product for reducing the look of dark spots. This powerful booster-serum contains licorice and lactic acid to slough off dead skin cells for a more rejuvenated-looking appearance.

How To Reduce The Appearance Of Ice Pick Acne Scars

Depressed acne scars are the most difficult type of acne scars to treat. For ice pick, boxcar and rolling acne scars, you have to add regular exfoliation to your routine. Natalie’s top pick is our Arctic Berry Peel & Peptide Illuminating System. This three-step system exfoliates deeply to refine the texture of the skin. Potent ingredients like ground wild cherry bark and lactic acid remove dead skin cells and buff the skin’s surface, while hibiscus seed extract plumps and smooths out the look of the skin.

Use our Citrus & Kale Potent C+E Serum along with the Arctic Berry Peel & Peptide Illuminating System for extra intensity. Powered by Vitamin C to improve the look of elasticity, the serum also includes hydrolyzed botanical hyaluronic acid extracted from grass to deeply hydrate and keep the skin plumped for a smoother-looking complexion.

Additional Tips To Prevent Acne Scarring

In addition to these powerhouse products, here are more tips for preventing and improving the look of acne scars:

    1. Visit A Spa

If you’re struggling with acne, be sure to visit an authorized Eminence Organics Spa. A trained esthetician can assess your problem skin and provide professional treatments, extractions or exfoliations, without the risk of scarring the skin.

    2. No Touching Or Picking

Since popping pimples can cause scarring, avoid picking or even touching your blemishes. Picking can tear the skin and force bacteria, oil and debris deeper, which can cause scarring. Even touching your face may spread bacteria, which can trigger acne and lead to scarring.

    3. Use SPF

Did you know dark acne scars can be worsened with exposure to the sun? Make sure you use SPF to protect against further darkening — explore our sun care options for more information about our SPF products.

    4. Consult a Dermatologist

If you are prone to acne or scarring, consult a dermatologist who can provide personalized advice and treatment options.

  • Does Your Skin Need A Reset? Do This 7-Day Challenge!

Does Your Skin Need A Reset? Do This 7-Day Challenge!

After a summer filled with sun, heat, chlorine, saltwater, and sunscreen, our skin often takes a beating, resulting in dullness, increased breakouts, and a lack of radiance. Seasonal skincare adjustments are something that many of us have become quite accustomed to, but sometimes it just doesn’t seem to be enough. If you neglected your skincare routine during those lazy summer days, developed brown spots from sun exposure, faced clogged pores and breakouts from sunscreen, or experienced dryness due to chlorine and saltwater, then your skin may need some extra TLC this fall– and I have just the challenge for you.

This past October I launched the 7-Day #OBEYRENEE Challenge, my first ever guided 7-day challenge for post-summer skin repair, with daily videos from me personally. What I like to call a Skin HIIT (high-intensity interval workout) this week-long routine is something I do every fall to get my skin back on track, and now I want to share it with you! All you need to get started are a few basic skincare products (most of which are likely already in your possession) and seven days dedicated to achieving your best glow yet. Let’s get glowing!

Which Skincare Products Do I Need For This 7-Day Challenge?

Before diving into the challenge, here’s a rundown of the essential and optional skincare products that I recommend for this 7-day challenge:

    Must-Haves:

    Nice to Have:

Don’t have all of the Renée Rouleau products that I’m using? No worries! Every morning and night, I exclusively use skincare products from my line (other than a prescription retinoid and some tools like NuFace, a gua sha, etc.), but I realize not everyone will have the exact products I have. Use whichever products you have on hand that are the closest to what I am recommending– and check out the FAQs at the bottom of this page for alternative product suggestions!

This is the introduction video for my 7-day challenge. For my daily AM and PM routines, follow along here.

Which Strength Retinol Should I Use?

The strength of retinol, retinoid, tretinoin, or other types of vitamin A you should use during the 7-day challenge depends on your individual skin type, as well as prior experience with this ingredient. If you’re new to retinol and unsure of how your skin will respond, seek more beginner-friendly products to minimize the uncertainty of possible dryness and irritation. However, if you’re familiar with retinol and looking for more of a transformative experience, then I encourage you to use the strongest retinol that you feel comfortable with. Remember, the more potent the retinol, the more noticeable the results!

    Will I Experience Side Effects?

It’s essential to be aware that using retinol or vitamin A products can lead to side effects such as sensitivity, dryness, and flaking. This is all considered normal because your skin’s barrier is being compromised for a short period during this challenge (particularly days 4-6, when the retinol is kicking in). If at any point these side effects become too much, modify the routine to your specific needs.

Why Is Moisturizer Optional on Some Nights?

As you follow along with the challenge, you may notice that I call out using a moisturizer as an optional step. This is because of a term called “product sandwiching.” For those new (or sensitive) to active ingredients like vitamin A, you may choose to layer a moisturizer above and below your application of vitamin A to create a buffer between it and the skin. This dilutes the strength of vitamin A, hence decreasing the strength of its side effects. However, if you want to receive the full effects of vitamin A and all of its potential peeling effects (which gives the full collagen boost), you may choose to opt out of using a moisturizer before or after using a retinol/ vitamin A product. This allows vitamin A to work deeper within the skin, potentially yielding more visible results.

Can I Repeat This 7-Day Challenge?

Good news for those who enjoy the challenge – you can repeat it! I encourage you to repeat this 7-day challenge whenever you find your skin is in need of another boost of results.

Here’s a tip: To maximize the benefits and give your skin the time it needs to rest, I recommend waiting 2-3 weeks between each challenge. This will allow your skin to fully recover and ensure you get the most out of each experience.

Is This 7-Day Challenge Suitable For All Skin Types?

Yes! This is appropriate for all of the nine skin types. If you want to give your skin a glow-up, this challenge is for you. Just make sure you’re using products appropriate for your skin type.

Will Skipping a Step Lessen My Results?

While it’s ideal to follow each step for the best results, don’t worry too much if you occasionally skip one. Try to stick with the routine as closely as you can, but remember that skipping a step here or there won’t ruin your chances of achieving great results. Just do your best and enjoy the journey!

I have a hard time using retinol, what should I use?

Whether you don’t have retinol or just don’t want to use it, that’s perfectly okay! However, it’s worth noting that without retinol, you may not experience the same transformative results. Retinol, especially in prescription strength, can provide significant collagen-boosting and peeling effects. But if retinol isn’t your thing or you can’t use it for any reason, don’t worry! You can still achieve skin-smoothing results that your skin will love.

The 7-Day #OBEYRENEE Challenge is a fantastic opportunity to reset your skin and rejuvenate your complexion post-summer. If you missed this challenge, keep an eye out for the next one, and in the meantime, follow along on YouTube and give your skin the care it deserves. Your radiant, post-summer glow is just 7 days away!

    Acne Prone Skin

“LOVE LOVE LOVE! I bought the Pineapple Refining Tonique mostly, I will admit, for the pineapple smell! It smells like a literal, real, fresh-cut pineapple and I LOVE IT. I have been using it for a couple weeks now almost daily. It leaves my face smelling wonderful, soft and clean. I follow up with a serum and moisturizer. I have been practicing not wearing makeup for about a year now and I have found this to really have a positive impact on my face. I think I have had far less acne this month and smoother-looking skin.” — Autumn B.

“I’ve tried everything for my problem skin … Clear Skin Probiotic Cleanser has worked miracles. It must be the organic ingredients because when I try to use anything else my skin breaks out again. Thank you, Eminence!” — Ashlie

    Oily Skin

“CLEAN PORES IN JUST THREE DAYS!!! I am in love with the Strawberry Rhubarb Dermafoliant! I have a very oily skin, and my esthetician recommended this product. I am so shocked by the results. My skin is CLEAN AND GLOWING!!” — Hira

“Wonderful! Marvelous! Magic! I have been hunting down something like this for a long time and had high hopes when a friend told me about this line of products. I bought the Strawberry Rhubarb Dermafoliant and have used it for a couple of months now and I am sold! I absolutely love everything about this. It’s not too abrasive. It smells delicious. I don’t have any sensitivity issues with it. It’s 100 stars from me on this. I am slowly buying up everything I need from this line exclusively now and no looking back. It’s LOVE!” — Bethanne

“I rarely will post a review on a company’s website but I had to come on here and sing the praises of the Mangosteen Daily Resurfacing Cleanser! Not only does it smell wonderful but for the first time in years my face is smooth and my oily pores have calmed down. I am so happy with the result!” — Pamela

“I have oily skin, so one of my favorite tricks is to mix a tonique or essence into my moisturizer to make it more lightweight. I love using the Kombucha Microbiome Balancing Essence with the Clear Skin Probiotic Moisturizer or the new Bakuchiol + Niacinamide Moisturizer.” — Taryl S., Eminence Organics Public Relations Team

    Sensitive Skin

“My esthetician recommended the Bamboo Firming Fluid as a more natural alternative since retinol products were too harsh and drying on my skin. I have been obsessed with this ever since … definitely notice a difference in my skin when I am using it. A little goes a long way.” — Stephanie B.

    Normal To Dry Skin

“Monoi Age Corrective Night Cream for Face & Neck is the best! I’ve been using it for 2 — 3 years now and I will never NOT use it! It’s a night cream but I actually use it during the daytime often! My skin is somewhere between dry and normal and it’s starting to show age (fine lines, etc.) so this moisturizer does the trick! This and the Strawberry Rhubarb Hyaluronic Serum are my go-to products and my skin hasn’t looked this good since my 20s! So many Eminence moisturizers are really fantastic, it’s hard to choose just one, but if I had to only use one, this would be it.” — Heather M.

    Dry Skin

“I was struggling with dry Colorado skin and no matter what I tried, nothing seemed to help my thirsty skin. I was recommended [the] Rosehip Triple C+E Firming Oil by an esthetician & although I was a bit skeptical at first due … because I was new to Eminence, I decided to give it a try. It was just a matter of days before I noticed a difference in my skin & now a year later I swear I have a brand new face. This serum is pure magic, it lasted me for nearly a year (a tiny bit goes a long way), I can say ‘goodbye’ to my dry skin & I will be a customer for life!” — Melanie

“I love the Stone Crop product line (Stone Crop Gel Wash, Hydrating Mist and Whip Moisturizer). As a man who uses these products, I find that it helps heal and moisturize my [dry] skin, without leaving it oily. It is especially great in winter in Canada! — Alexander W.

    Dry, Acne Prone Skin

“This face wash and all the stone crop products have transformed my skin. I have dry skin prone to breakouts that has resulted in psoriasis. This helped my skin go from bumpy to hydrated and glowing. I double cleanse with [the Stone Crop Gel Wash] alone and use also the Stone Crop Masque. It is a legit game-changer … I always went for more abrasive cleansers but using this gentle but extremely effective cleanser made all the difference.” — Ashley

    Combination, Aging Skin

“The Stone Crop Gel Wash is my favorite, all-around facial cleanser. It is fresh, foams and applies well and gives the feeling of super fresh, clean skin with a hint of hydration. I have combination skin with early signs of aging and the cleansers for mature skin are often too rich for me. I love this cleanser for how well it dissolves the day, makeup and oil. The scent is light and refreshing and a little of this goes a long way. I always have a bottle of this on my shelf as it is quite often my go-to daily cleanser. Whatever your skin concerns or needs are, this cleanser take the cake for a ‘does-it-all’ cleanser. [This cleanser] is a must-have in my skincare routine. 5/5.” — Jennifer W.

    Aging Skin

“I love to apply the Eight Greens Phyto Masque — Hot after the Turmeric Energizing Treatment has set on the skin (10 minutes or so). This re-ignites the feeling of heat provided in the Turmeric Masque, and you get an additional kick from the Eight Greens Masque that helps the visible signs of aging!” — Kaitlyn B., Eminence Organics Product Support Team

    Sensitive, Dull Skin

“I was looking for a cleanser that would help even out my skin overall from a few acne scars, redness and slight dullness. I wanted to reduce the amount of foundation I wore daily. The Mangosteen Daily Resurfacing Cleanser has reduced my pores & evened out [the look of] my complexion — I hardly wear any foundation anymore!! Love this cleanser & use it daily, even on my sensitive skin.” — Danielle

    Dull, Uneven Skin

“I’ve been mixing the Eight Greens Phyto Masque — Hot, the Citrus & Kale Potent C+E Masque and the Bamboo Age Corrective Masque together. The combination gives me a glow and a more even-looking skin tone.” — Sabella L., Eminence Organics Digital Marketing Team

I use it once a week as a deep cleanse and exfoliation, and my skin feels perfectly soft and smooth after.” — James S., Eminence Organics Digital Marketing Team

    Textured Skin, Redness

“Best hands down! I’ve been using Citrus & Kale Potent C+E Serum 1 — 2 times per day for under a month and my skin visibly looks brighter, feels hydrated and plump and not oily. My redness [due to dryness] has started to reduce. The best part … the texture of my skin is smooth! I absolutely love this serum!” — Lisa

  • Salad with Beetroot and Feta

    Salad with Beetroot and Feta

A light lunch or delicious side dish, this salad with beetroot and feta is made with tender roasted beets, salty feta, crunchy walnuts and microgreens and topped off with a tangy balsamic vinaigrette. Buy cooked beets at the grocery store for a significant time saver!Beetroot salad with feta on white plate beside kitchen towel and small wooden bowl of balsamic vinaigrette.

    Why I Love This Recipe

This Beetroot Salad with Feta is refreshing, nutrient-packed, and full of flavor. I’m all for a salad without lettuce or leafy greens from time to time and this one definitely fits the bill.

As a dietitian I know that beets are an excellent source of antioxidants like vitamin C, carotenoids, and betalains, and contain several vitamins and minerals like potassium, folate, iron, and manganese. They are also high in nitrates that play a role in regulating blood pressure, reducing oxidative stress, promoting cardiovascular health, and improving lung function.

The beets in this salad are earthy and tender and complimented well with the saltiness from the feta and crunch from the walnuts. I also love this recipe with creamy goat cheese and often switch up the cheese with whichever I have on hand. The dressing is a tangy balsamic vinaigrette that is both deliciously fresh and refreshing.

This salad has a short ingredient list and you can even prepare the beets ahead of time so it comes together quickly when you’re ready to eat or serve. This beet salad makes a great lunch or side dish with dinner.

    Ingredients You’ll Need

graphic of ingredients for beetroot salad with feta on marble surface with black text overlay

    Notes on Ingredients

beets: earthy, slightly sweet and full of flavor. To save some time, you can buy cooked beets at the grocery store but they tend to be smaller in size so you may want to double the amount.

crumbled feta: provides a creamy texture and saltiness that balances out the beets nicely. I also make this salad with goat cheese instead of feta depending on what I have in my fridge!

toasted walnuts: adds some monounsaturated fat and plant-based protein. You don’t have to toast your walnuts, but I definitely recommend it for that extra nutty flavor!

microgreens: add a boost of fresh flavor and are loaded with vitamin A, E, C and K, and minerals such as calcium, magnesium, iron, selenium and zinc

balsamic vinegar: gives a rich, sweet, and fruity flavor

dijon mustard: acts as an emulsifier to help incorporate the olive oil and vinegar

honey: gives a touch of sweetness to the dressing

olive oil: acts as the base of the dressing

thyme: adds an earthy, minty, lemony flavor to the dressing

    salt and pepper: flavor enhancers

Equipment You’ll Need (affiliate links – if you make a purchase I receive a small commission):

    Baking Sheet

How to Make Beetroot Salad with Feta

step by step graphic of how to make beetroot salad with feta

Roast beets. Wrap beets loosely in aluminum foil and roast on a baking sheet until fork-tender, about 60-90 minutes. Be sure to check them every 20-30 minutes and if they look dry or scorched, pour a tablespoon of water over them before re-wrapping.
Make dressing. While beets are roasting (or cooling!) combine balsamic vinegar, dijon mustard, honey, thyme, salt, olive oil, and black pepper in a small bowl or mason jar.
Peel beets. Once cool enough to handle (about 20 minutes), peel the skins away using a paper towel or with your fingers under water. If they don’t peel easily, they likely need more cooking time.
Slice beets. Place beets cut side down on cutting board and slice into half moon shapes, about 1/4-inch thick.
Assemble and serve. Add beets to a medium size bowl with feta, toasted walnuts and microgreens. Top with desired amount of dressing and toss to coat.

    Expert Tips

The beets can be prepped ahead of time by roasting, peeling, and cutting them in advance. Once this is done, the salad can be assembled in minutes when you’re ready to eat or serve.
If you don’t have time to roast beets in advance, you can also choose to buy pre-cooked beets at the store to save some time (and clean up!).
Speaking of clean up, beets stain very easily so be mindful when you’re handling them. Sometimes I like to wear gloves when peeling and cutting them.

    Recipe FAQs

Can I use canned beets instead of fresh?

Yes, you can! I haven’t made this recipe with canned beets yet but think that would be a great alternative and timesaver.

    What makes beets taste better?

Beets go well with citrus flavors, garlic, vinegar, and plenty of salt to complement their earthy, deep flavor. They stand up to bold flavors, so they pair well with cheeses like feta, goat, brie, or blue cheese.

What is the best way to cook beets?

Beets can be steamed, boiled, or roasted. I like roasting beets as I find it brings out their earthy, slightly sweet flavor. I suggest roasting beets in foil packets to help them retain moisture and cook to tender perfection.

    Storage and Preparation

Beet salad leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.

You can roast the beets ahead of time and then assemble the salad when ready to serve / eat!

    Description

A light lunch or delicious side dish, this salad with beetroot and feta is made with tender roasted beets, salty feta, crunchy walnuts and microgreens and topped off with a tangy balsamic vinaigrette. Buy cooked beets at the grocery store for a significant time saver!

4 large beets, stems removed and scrubbed thoroughly
    1/2 cup crumbled feta cheese
    1/4 cup toasted walnuts
    1/2 cup microgreens

    For the balsamic vinaigrette:

    1/4 cup balsamic vinegar
    1 tablespoon dijon mustard
    1 tablespoon honey
    1/2 teaspoon dried thyme
    1/2 teaspoon salt
    3/4 cup olive oil
freshly ground black pepper, to taste

Wrap beets loosely in aluminum foil and place on a baking sheet. Roast until beets are fork-tender, about 60-90 minutes (depending on the size of the beets), checking every 20-30 minutes. If beets look dry or scorched, pour a tablespoon of water over the beets before re-wrapping.
Set beets aside so they can cool before peeling. Once beets are cool enough to handle (about 20 minutes), peel the skins away using a paper towel or with your fingers under water. If the beets don’t peel easily, they likely need more cooking time.
Slice beets in half lengthwise. Place cut side down on cutting board and slice into half moon shapes, about 1/4-inch thick.
Add beets to a medium size bowl. Add feta, toasted walnuts and microgreens.
Add desired amount of dressing and toss salad to coat.

    Notes

Feta can be easily substituted with goat cheese (I make this salad with both types of cheese).
Beets can easily stain clothing, hands, etc. so be mindful when handling.
If you don’t have time to roast beets, you can buy cooked beets at the grocery store – these beets tend to be smaller in size so you may want to double the amount.
