    Instant Pot Green Bean Casserole

    Ready in about 30 minutes, this Instant Pot Green Bean Casserole has all the flavor you love in your favorite Thanksgiving side dish but is ready in a fraction of the time! No oven space needed!

    Who doesn’t love homemade green bean casserole for Thanksgiving? Like from scratch. We’re talking béchamel sauce, the whole nine yards.

    But on Thanksgiving, most of us only have like three yards in us, not nine.

    Because there’s so much food prep to think about on Thanksgiving, my motto is to spend the time where it’s worth it (i.e. turkey and mashed potatoes IMO) and find time savers for the rest.

    Enter, the Instant Pot. I’m a big fan of taking advantage of slow cookers and Instant Pots on Thanksgiving as it saves precious oven space, which is a hot commodity on Thanksgiving.

    So I decided to take my beloved homemade green bean casserole recipe and tweak it to make an Instant Pot version. The verdict is:

    full of flavor – think garlic, umami, and thyme
    still creamy and rich tasting
    great texture from the crispy fried onions
    ready in about 30 minutes
    no oven space necessary 
    less than 5 minutes of prep time
    worthy of a Thanksgiving table

    Ingredients You’ll Need

    Notes on Ingredients

    mushrooms: i use cremini or baby bella mushrooms because they’re more flavorful (hi umami) than white button.

    green beans: purchase pre-washed, pre-trimmed green beans for an extra time saver

    vegetable broth: you could also use chicken broth for flavor if no one who will be eating it is vegetarian / vegan

    heavy cream: adds richness

    milk: this plus the heavy cream helps give it that béchamel – like richness.

    parmesan cheese: this adds more umami flavor to the dish

    crispy fried onions: a non-negotiable for green bean casserole – adds salty flavor and satisfying crunchy texture

    thyme: adds a sweet, earthy, herbaceous flavor

    garlic: the smell of garlic + butter + mushrooms sautéing gets me every time. don’t skip the garlic!

    butter: I typically use unsalted when cooking but salted is delicious too!

    salt & pepper: not pictured but still important for enhancing flavor

    cornstarch: helps thicken the sauce

    How to Make Instant Pot Green Bean Casserole

    Sauté mushrooms. Set Instant Pot to sauté function for 10 minutes. Add olive oil and once oil is heated, add mushrooms and sauté, stirring mushrooms halfway through, until tender and browned, about 8 minutes.
    Add aromatics to the mushrooms. Add garlic, butter, and thyme and set to sauté until butter is melted, about 1-2 minutes. Season with salt and pepper, to taste.
    Pressure cook the green beans. Add green beans and vegetable broth. Secure lid onto Instant Pot. Close the steam vent (should be set to sealing). Set to high manual pressure for 3 minutes.
    Make the cream sauce. In a small mixing bowl, whisk together cream, milk, Parmesan cheese, and cornstarch until combined.
    Quick release pressure. After pressure cook is finished, use quick release valve to release steam. Once pressure is released, open lid and strain out the remaining liquid.
    Make it creamy. Stir in the cream mixture and set to sauté until mixture begins to bubble and thicken, about 1-2 minutes. Season with salt and pepper, to taste.
    Make it crunchy. Pour green beans into a casserole dish and top with crispy fried onions.
    Optional: Brown the fried onions. Preheat broiler on low and place casserole dish under broiler until onions are browned, about 1-2 minutes.

    Expert + Time SavingTips

    Buy pre-washed, pre-trimmed green beans.
    Buy sliced cremini mushrooms
    If you can put your oven broiler on low to brown the onions, do so. Or be sure to check every minute so they don’t burn! 
    Be sure to drain out the extra broth after green beans have pressure cooked so that you don’t end up with a soggy casserole!

    How far in advance can you make green bean casserole?

    You can make the green bean casserole up to three days in advance and store it covered in the refrigerator. Let the dish cool before storing in the fridge. When you’re ready to reheat, let it sit out at room temperature for 30 minutes then bake, covered with foil, at 350 degrees F until warmed throughout, about 15-30 minutes. Top with fresh crispy fried onions. 

    How do I keep green bean casserole from getting mushy?

    Be sure to not add too much liquid. That’s why it’s important to drain out the broth/liquid from the green beans pressure cooking. If you need cream mixture needs to thicken more, add more cornstarch / sauté longer.

    What happens if you put oil in the Instant Pot?

    You can safely add small amounts of oil to the Instant Pot! The oil will help you sauté the mushrooms in this recipe.

    Can I leave green bean casserole out overnight?

    No. Don’t leave your casserole out at room temperature for more than two hours to avoid any bacteria growth.

    You can! If you overcook green beans make sure to reduce the pressure cook time – this recipe only calls for 3 minutes of pressure cooking.

    How do you store casserole leftovers?

    Green bean casserole leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.

    Can I freeze green bean casserole?

    Yes! Let the casserole cool completely and cover with plastic wrap and foil and freeze up to two weeks. To serve, preheat oven to 350 degrees F, remove plastic wrap and foil. Cover with new foil and bake until heated through, about 45 minutes. Uncover, top with fried onions and bake until casserole is bubbling, about 20 more minutes.

    Description

    Ready in about 30 minutes, this Instant Pot Green Bean Casserole has all the flavor you love in your favorite Thanksgiving side dish but is ready in a fraction of the time! No oven space needed!

    2 tablespoons olive oil
    1 lb. sliced cremini mushrooms (Baby Bella mushrooms)
    4 tablespoons butter
    4 cloves garlic, minced
    4 fresh thyme sprigs, chopped (about 1 1/2 teaspoons)
    Salt and pepper
    2 lbs. green beans, washed and trimmed
    1 1/2 cups vegetable broth
    3/4 cup heavy cream
    2/3 cup milk
    1/2 cup parmesan cheese
    2 tablespoons cornstarch
    1 cup crispy fried onions

    Set Instant Pot to Sauté function for 10 minutes. Add olive oil and let heat for 1-2 minutes. Add mushrooms and sauté, stirring every few minutes, until browned and tender, about 8 minutes.
    Stir in butter, garlic and thyme and set to Sauté until butter is melted, about 1-2 minutes. Season with salt and pepper.
    Add green beans and vegetable broth. Secure lid onto Instant Pot. Close the steam vent (should be on sealing). Set to manual high pressure for 3 minutes.
    In the meantime, in a small mixing bowl, whisk together cream, milk, parmesan cheese, and cornstarch.
    After pressure cook is finished, use quick release valve to release steam.
    Once pressure is released, open lid and drain out remaining broth / liquid.
    Stir in cream mixture and set to Sauté until mixture begins to bubble and thicken, about 1-2 minutes. Season with salt and pepper, to taste.
    Pour green beans into casserole dish. Top with crispy fried onions.

    La Prairie’s Skin Caviar line is a favorite among skincare enthusiasts — and for good reason. The lotions, creams, serums and oils use caviar extract to plump and firm the skin. Now, 35 years after the debut of the line, La Prairie launched its newest serum and the most luxe product in the collection: Skin Caviar Harmony L’Extrait Serum. What’s different about it? Well, it promises to diminish vertical lines on the face so let’s just say, I’m in.

    Skin Caviar Harmony L’Extrait Serum first debuted at the 2022 Art Basel fair in Basel, Switzerland, along with a digital exhibition featuring five emerging female artists. Here, it’s a celebration of the luxe packaging with its curves in the cobalt blue glass. But for me, it’s all about the good stuff inside, the potent facial serum. Because La Prairie believes it found the “key to the harmony of youth” with its newest technology.

    Most anti-aging serums target horizontal lines, like those lines on your forehead. This serum goes after vertical lines via the strengthening and redensifying of skin ligaments in your face. When I tried Skin Caviar Harmony over a bit longer than a week, I focused the serum especially on my smile lines and fine lines in between my brows, really massaging it in areas where vertical lines are the most dramatic.

    The application of this serum is luxe on its own. The tiny microbeads dissolve as you rub it in and the formula quickly absorbs into the skin. It feels lightweight and hydrating right away — not greasy and pore-clogging (my biggest fear). The brand recommends layering it with Skin Caviar Luxe Cream ($555 at Nordstrom), but since I’m PMSing, I went with an oil-free moisturizer to keep my hormonal breakout at bay. (FWIW, it was Reneé Rouleau Skin Recovery Lotion.)

    I’m lucky that my lines aren’t especially deep (thanks, Mom) but my skin does easily get dry and dull, which in turn makes even fine lines more obvious. I can’t promise anything about how strong my skin ligaments are, but I did quickly notice my skin looked more hydrated and plump in just a week. Skin Caviar Harmony L’Extrait Serum is an investment, but if you’re in the market for a luxe new skincare product, it’ll make a gorgeous addition to your routine.

    Have you ever seen a skincare product marketed as having high, low or even multiple weights of hyaluronic acid? If you found yourself wondering what this means (and whether or not it affects the efficacy of the product), you’re not alone.

    In this post, I’ll explain what it means for hyaluronic acid to come in different weights, what that means for your skin, and which one to look for. 

    How Does Hyaluronic Acid Benefit Skin?

    Hyaluronic acid (HA) is one of the most ubiquitous ingredients in skin care. As a refresher, HA is a type of sugar called glucosaminoglycan that is naturally produced by our bodies. Internally, HA helps lubricate joints and other connective tissues. It’s also produced within our skin to keep everything supple and hydrated. 

    In skin care, HA functions as a humectant. This means it binds water to the skin and helps it hold onto moisture, preventing dehydration through transepidermal water loss. Ultimately, the result is moisturized skin that appears dewy, plump, and smooth. 

    What Does It Mean to Have Different “Weights” of Hyaluronic Acid?

    When we talk about different “weights” of HA, we’re talking about molecular mass (aka the size of the molecule). HA molecules are broadly categorized as small, medium, or large and are measured in daltons. 

    But why does this matter? The size of a HA molecule determines how deeply it can be absorbed into the skin. The largest, heaviest molecules will sit on top of the skin and attract water to the outermost layer. Smaller, lighter molecules are able to penetrate through the skin barrier, where they attract water internally to plump skin underneath.

    Which Weight of Hyaluronic Acid is Most Effective?

    The short answer is, HA is effective regardless of whether it’s low, medium, or high weight. All of these will improve skin elasticity and hydration to some extent. Which weight you use depends on the results you’re looking for. The general consensus is that anything below 50 daltons could potentially irritate the skin while going above 2,000 won’t provide any additional benefit.

    The benefit of using medium or high-weight HA is that the results are instant. HA is well-known for its ability to immediately hydrate the skin, giving it a plump and dewy look. This plumping effect also makes fine lines appear less prominent. By preventing water loss, you’re also strengthening your skin barrier which can help with healthier skin aging over time. 

    Low-weight HA doesn’t have the same immediate, visible effect, but it may be more effective for the reduction of wrinkle depth in the long run. Some studies have also suggested it’s longer-acting, meaning it will help your skin hold on to water for a longer period of time. With low-weight HA, it’s important to use it consistently for at least a month in order to see benefits. If wrinkle reduction is your main goal, you can also check out these other ingredients that promote firmer skin. 

    Alternatively, if you want the best of both worlds, you can look for products with a blend of molecular weights. One thing to keep in mind is that many companies don’t disclose the exact molecular weight of their HA products, but you can get a sense by feeling the texture of the product. Products with higher-weight molecules have more of a slip since they sit on top of the skin, whereas smaller-weight molecules will give products a more watery texture since they soak in. 

    The Bottom Line

    Is one weight of HA better than the other? The answer is no, HA will improve skin hydration and elasticity regardless of molecule size. Whether you look for a product with low or high-weight HA depends on what your priority is. High-weight molecules have an instant plumping and hydrating effect, providing relief for skin that looks dull or crepey due to dehydration. For more long-lasting benefits, opt for smaller weights. These rehydrate skin cells over time so you won’t get the immediate effect, but they’re better for reducing wrinkle depth over time.  

    Personally, I tend to look for a product with medium to high-weight HA. I’m usually looking for that instant gratification—I want an instant hit of moisture to bring life to my skin, smooth out lines, and help me retain moisture throughout the day.     Like many people who’ve tried to lose weight over the years, there’s a good chance you’ve tried out more than one diet.

    Most diets focus on restricting your eating by cutting out things like refined sugars, carbohydrates, fat content, etc. And while reducing your intake of those things can aid in weight loss*, the constant restriction can also make it more challenging to stay dedicated and consistent.

    Another practical approach is to allow some of the foods you enjoy most while focusing on portion control instead. Portion control is when you focus on the amount of food you’re eating and adjust it according to your calorie and nutritional goals.

    Portion control has become especially challenging over the last several decades. That’s because standard portion sizes — both in restaurants and marketplaces — have increased dramatically since the 1970s. A 2002 study published in the American Journal of Public Health found that recommended and restaurant-served portion sizes increased sharply in the 1980s and have steadily risen in parallel with average body weights in the U.S.

    Controlling your portions is helpful if you still want to enjoy certain calorie-dense foods. And thankfully, there are ways to go about it. We rounded up three strategies to maximize your weight loss efforts through portion control. Applying these tips can go a long way toward helping you reach your goals!

    Smaller Plate


    1) Use a smaller plate.


    From a young age, many of us have been taught to finish everything on our plates. The problem is that plates tend to be large. And those large, platter-like plates we’re accustomed to do not bode well for controlling portion sizes. Consider filling a smaller plate, such as a salad or portion-control plate, with your meal. This will help you be more aware of how much you’re eating. You can always get more if you don’t feel satisfied in the end.

    You should also aim to fill half your plate with vegetables, a quarter with lean protein, and the other quarter with a whole grain like brown rice.

    Food Scale


    2) Use a kitchen scale.


    Measuring your portion sizes with a scale can go a long way toward helping you eat the right amount. Digital scales are an excellent investment when you’re learning how proper portion sizes look. Spend some time on the weekend measuring out your portion sizes for food you plan on eating throughout the week. Or, if you would rather, measure the portion sizes ahead of each meal. It won’t take long before you get a solid idea of what the correct portion size looks like.

    Mindful Eating


    3) Be mindful when you eat.


    We live in a busy world. Too often, you may find yourself scarfing down a meal in front of the TV or ahead of a work meeting. But slowing down and practicing mindful eating works wonders toward eating the correct portion size. Treat your meals like any other important activity by setting time aside in your day to sit down and eat them slowly and mindfully. Pay attention to each bite’s smell, texture, and taste, and listen to the cues your stomach sends your mind as you go.
